Tzatziki and Cucumber Cod

with spiced roasted potatoes and vegetables

1. Setup Preheat the oven to 400°F. Cut the potatoes into cubes. Cut the cucumber into very small cubes. Cut the pepper and onion into strips. Zest the lemon. Chop the cilantro. Pat the fish dry.
2. Cook the cod Put the pepper, onion and the potatoes on a sheet pan lined with baking paper. Mix with the spices, a drizzle of oil, salt and pepper. Bake in the oven for 16-18 minutes. Once this step done, add the cod to the pan and drizzle with some oil, the zest, salt and pepper. Put the pan back in the oven and cook 8-10 minutes until the fish and the potatoes are cooked through.
3. Plate your dish Top the fish and vegetables with the tzatziki, the diced cucumbers, cilantro and some lemon juice to taste. Bon appétit!
