West Coast Kale & Apple Salad

with Crispy Chickpeas & Chive Dressing

1. Roast Chickpeas Bring 1 litre water to a boil in a small pot. Turn oven on to 400°F and line a baking sheet with foil. Drain and rinse chickpeas in a sieve and pat dry with paper towel. Add chickpeas to baking sheet and toss with 1 tbsp. olive oil. Season to taste with salt and pepper. Place in oven and cook for 14–18 minutes until golden and crispy.
2. Prepare Soft Boiled Eggs Once water is boiling, carefully place eggs into water using a slotted spoon and set a timer for 7 minutes. While eggs are cooking, fill a medium bowl with ice cold water. When timer goes off, remove eggs from pot and place into water bath for 2–3 minutes, until cooled. Alternatively, cook eggs to preference.
3. Prepare Ingredients Remove kale leaves from stem and tear into 2 inch pieces. Discard stems. Cut apple into quarters, cut out and discard core, then slice into 1/4 inch slices lengthwise. Cut avocado in half and remove pit. Slice avocado into 1/2 inch thick slices and scoop flesh out with a large spoon. Finely chop onion and chives, keeping them separate.
4. Begin Salad In a large bowl, combine kale and the following to taste: lemon-vinegar blend, salt and pepper. Massage kale with clean hands for 1 minute.
5. Finish and Serve To large bowl with kale, add dressing base, buttermilk, onion, spring mix, apple and half of the chives. Toss salad until thoroughly coated, and divide between serving bowls. Remove eggs from water, peel and slice in half. Top salad with avocado, egg, chickpeas and radish in segments. Garnish with remaining chives. Enjoy!
