Apple and Cheddar Cheese Crepes

with pecans, maple syrup and cinnamon

1. Adjust the steps of the recipe for your children To help your children get accustomed to new flavours and develop their tastebuds, you can keep the cheese, the apples and the nuts separate and the kids will decide if they want some on their plate upon serving.
2. Setup Roughly chop the nuts. Slice the apples.
3. Make the crepe batter In a bowl, mix together the flour, a pinch of salt, a pinch of cinnamon and eggs. Gradually whisk in the milk until smooth. Set aside. Gives about 4 large thin crepes.
4. Cook the apples Melt a knob of butter in a pan over medium heat. Add the apples, the nuts, the brown sugar, one pack of maple syrup and a pinch of cinnamon. Cook until the apples are slightly caramelized. Add more butter if needed.
5. Plate your dish Melt a knob of butter in a pan over medium-high. Pour a laddle of batter in the pan. Cook for 2 minutes on each side. Garnish with cheese and fold. Cook until the cheese is melted then remove from the pan. Garnish with caramelized apples and maple syrup. Bon appétit!
