1. Setup
Chop the garlic and the green onions. Slice the shallot. Cut the bok choy in half lengthwise, or keep them whole, if desired.
2. Cook the bok choy
In a skillet over medium-high heat, add a drizzle of olive oil. Cook the bok choy for 4-5 minutes. Season with salt and pepper. Remove and set aside.
3. Make the sauce
In a bowl, mix the soy sauce, the oyster sauce, the garlic, 1 tbsp of sugar and 1 tbsp of water. Bring a pot of water to a boil.
4. Cook the pork
In the same pan as for the bok choy, add a drizzle of olive oil. Add the shallots and the dried peppers and cook for 1-2 minutes. Add the ground pork and break into pieces. Cook for 5-6 minutes. Add the sauce and cook another 1-2 minutes.
5. Cook the noodles
Once the water is boiling, add the noodles and cook for 3-4 minutes. Drain and reserve.
6. Plate your dish
Serve noodles with the pork and the bok choy. Garnish with the green onions and the fried onions. Bon appétit!
