Baked Vegetables and Feta

with chickpeas, dill and toasted bread

1. Setup Preheat the oven to 400°F. Cut the tomatoes, zucchini and onion into small cubes. Chop the spinach and dill. Drain and rinse the chickpeas.
2. Cook the vegetables Place the tomatoes, zucchini, onion and spices in a baking dish with a generous drizzle of oil. Add salt and pepper. Bake in the oven for 15 minutes.
3. Add the feta Remove the dish from the oven. Mash the tomatoes a little bit. Add the spinach and chickpeas and mix. Garnish with the feta and a drizzle of oil. Put back in the oven for 10-12 minutes. Meanwhile, put the slices of bread on a baking sheet and cook in the oven for 10-12 minutes. Butter the slices of bread when they come out of the oven, if desired.
4. Plate your dish Mix the vegetables with the melted feta for creamy vegetables. Garnish the vegetables with the dill and serve with the slices of bread. You can also let the children help themselves to their fill to develop their autonomy. Bon appétit!
