Caramelized Onions and Mushroom Crêpes

with goat cheese sauce, arugula and walnuts

1. Setup Slice the mushrooms and the onions. Roughly chop the walnuts. Chop the garlic and the parsley.
2. Make the caramelized onions In a pan over medium heat, add a drizzle of olive oil. Add the onions and 1 tbsp of sugar. Salt and pepper. Cover and cook for 8-10 minutes. Once the onions are caramelized, add the garlic and the mushrooms. Cook for another 4-5 minutes. At the end, add the parsley. Mix well, season with salt and pepper.
3. Make the crêpe mixture In a bowl, mix the eggs with the milk. Mix well and gradually add the flour. Season with salt and pepper.
4. Cook the crêpes In a pan over medium heat, add a tbsp of butter. Add some of the crêpe mixture to make a thin layer in the pan. Cook the crêpes 1-2 minutes on each side.
5. Make the sauce In a small pot, combine the goat cheese and the cream. Mix well and heat up for 2-3 minutes or until a smooth sauce forms.
6. Plate your dish Garnish the crêpes with the onion and mushroom mixture. Fold. Garnish with the goat cheese sauce, the arugulaand the walnuts. Bon appétit!
