Chimichurri Steak Tacos

1. Adjust the steps of the recipe for your children To help your children with the development of their taste, it's possible to adjust the recipe for them. Rather than marinate the shallot, cook it with the meat. Keep the chimichurri for adults, herbs, jalapeno and raw garlic being less appreciated by children. Finally, serve everything separately and let everyone make their own tacos! It's a fiesta!
2. Setup Cut the red pepper into strips. Drain the sweetcorn. Thinly slice the shallot and place it in a bowl with 2 tbsp of vinegar and a pinch of sugar. Finely chop the herbs, garlic and jalapeno. Cut the lime into wedges. Crumble the feta.
3. Cook the meat Heat a drizzle of oil in a pan over medium-high heat. Brown the meat, then add the cumin, red pepper and sweetcorn. Cook for 2 minutes. Season to taste.
4. Make the chimichurri In a bowl, mix together the herbs, the juice of half a lime, the garlic, the jalapeno (to taste, spicy), about 1/4 cup of olive oil and 1 tbsp of vinegar. Add salt and pepper.
5. Plate your dish Heat the tortillas if desired. Garnish the tortillas with meat, vegetables, chimichurri, feta and pickled shallot. Serve with lime wedges. Bon appétit!
