Corn and Zucchini Fritters

with radicchio salad and yogurt and herb sauce

1. Setup Grate the zucchini. Chop the green onions, the cilantro and the basil. Slice the apple and the radicchio.
2. Make the mixture Drain and rinse the can of corn. In a bowl, combine the zucchini, the corn, the cheese, the eggs, the flour and half the green onions. Mix well and season with salt and pepper.
3. Cook the fritters In a deep pan over medium-high heat, add a generous drizzle of vegetable oil. Once the oil is hot, place about 2 tablespoons of the corn and squash mixture and cook for 2-3 minutes on each side. Remove and place on paper towels.
4. Make the sauces In a bowl, combine the chopped herbs, the maple syrup and 1 tbsp of olive oil. In another bowl, combine the yogurt with 1 tbsp of the herb sauce.
5. Make the salad In a bowl, mix the radicchio with the apples and the herb and maple syrup sauce.
6. Plate your dish Serve the fritters with the salad and the sauce. Garnish with the rest of the green onions. Bon appétit!
