Creamy Roasted Pepper Pasta

with croutons, capers and basil

1. Setup Preheat the oven to 425°F. Cut the pepper and onion into pieces. Tear the bread into small pieces.
2. Cook the peppers Place the peppers and the onion on a sheet pan lined with baking paper. Add a drizzle of oil, salt and pepper. Bake in the oven for 18-20 minutes.
3. Cook the pasta Bring a pot of salted water to a boil. Cook the pasta 8-10 minutes until tender. Keep 1/4 2P | 1/3 3P cup of the cooking water and drain.
4. Cook the bread Heat a generous drizzle of oil in a pan over medium-high heat. Cook the bread pieces for 4-6 minutes until browned. Remove from the pan.
5. Make the sauce Put the roasted peppers and onion in a blender with the garlic, cream, grana padano, a drizzle of oil, the cooking water, salt and pepper. Blend into a homogeneous sauce. Mix the pasta with the sauce. Children are often interested in seeing a blender in action, take the opportunity to show them the ingredients that go into the sauce, they will be curious to give it a taste.
6. Plate your dish Serve the pasta and garnish with the croutons, capers and basil. Add a drizzle of oil to taste. Bon appétit!
