Crispy Eggplant and Hummus Burger

with tomato, cucumber and za'atar pita chips

1. Setup Preheat the oven to 400°F. Slice the eggplant into rounds of about 2 cm thick. Slice the tomato. Cut the pita bread into triangles or squares. Thinly slice the cucumber and onion. Finely chop the garlic.
2. Bread the eggplant Mix the cornstarch with 1/4 2P | 1/3 3P cup of water in a bowl until diluted. Put the panko in another bowl. Season with salt and pepper. Dip the eggplant slices in the cornstarch then coat with panko.
3. Cook the chips Toss the pieces of pita with a drizzle of oil, the za'atar and a pinch of salt. Place on a baking sheet lined with baking paper. Bake in the oven for 10-12 minutes until colored.
4. Cook the eggplant Heat a generous drizzle of oil in a skillet over medium-high heat. When the oil is hot, cook the eggplant slices 2-4 minutes on each side or until browned. Place on absorbent paper.
5. Mix the hummus Mix the hummus with the garlic to taste.
6. Plate your dish Heat the buns 1-2 minutes in the oven. Garnish with the hummus, eggplant slices, tomato, cucumber, onion and arugula. Serve with the pita chips. Bon appétit!
