Crispy Honey Beef Stir-Fry

with broccoli, basmati rice and cashews

1. Cook the rice Bring 1.5 2P | 2 3P cups of water to a boil in a pot. Pour in the rice, cover and cook for 10-12 minutes over low heat.
2. Setup Chop the garlic, the ginger and the green onions. Roughly chop the cashews. Cut the broccoli into pieces.
3. Cook the beef In a deep pan over medium-high heat, add a generous drizzle of vegetable oil. In a bowl, mix the beef strips with the cornstarch. Once the oil is hot, cook the beef strips for 1 minute on each side, or until crispy. Remove and place on paper towels.
4. Cook the broccoli In the same pan, remove most of the oil to keep only about 1 tbsp. Add the broccoli and cook for 2-3 minutes.
5. Assemble In a bowl, combine the sauce, the honey, the garlic and the ginger. Add to the pan with the beef strips. Mix well and cook for 1-2 minutes or until the sauce has thickened and the beef strips are well coated.
6. Plate your dish Serve the beef strips with the rice. Garnish with the cashews and the green onions. It is possible to leave everything in the center of the table and let everyone help themselves. Bon appétit!
