Greek Style Pork Loin

with cherry tomatoes, green beans and oregano tzatziki

1. Setup Preheat oven to 425°F. Chop the garlic Pick and chop oregano leaves. Cut the pepper into 3/4 inch strips. Trim both ends of the beans. Cut the potatoes into 1 inch pieces.
2. Cook in the oven Put the potatoes, half of the garlic, the peppers and the green beans on a lined sheet pan. Drizzle with oil, and season with half of the oregano, salt and pepper. Bake in the oven for 10-12 minutes. Take the sheet pan out of the oven. Place the pork and the beans on the baking sheet. Add the souvlaki spices and seasoned with a drizzle of oil, salt and pepper** to the baking sheet and cook for another 12-15 minutes or until the pork reach an internal temperature of 160F.
3. Mix the yogurt Grate the cucumber. Mix the yogurt with the cucumber, the garlic to taste, the rest of oregano, a drizzle of oil and pepper.
4. Plate your dish Serve the pork with the grilled vegetables, the cherry tomatoes and garnish with the tzatziki. Bon appétit!
