with oregano potatoes, feta and cherry tomatoes

1. Cook the potatoes Preheat the oven to 425°F. Cut the potatoes into quarters. Mix with a drizzle of oil, 3/4 of the oregano, salt and pepper. Place on a baking sheet lined with baking paper. Bake in the oven 23-26 minutes until tender.
2. Setup Slice the tomatoes in half. Thinly slice the onion. Crumble the feta and mix with the rest of the oregano.
3. Make the sauce Put the demi-glace in a saucepan with 1 2P | 1.5 3P cups of water. Whisk and bring to a boil. Reduce the heat to medium-low and simmer 4-5 minutes until the sauce thickens a little.
4. Plate your dish Serve the fries and garnish with all the ingredients and the sauce. Add salt and pepper. Top with some tzatziki to taste. Otherwise, you could place everything in the center of the table and let everyone serve themselves. Bon appétit!
