1. SetupPreheat the oven to 425°F. Cut the zucchini into slices about 1-2 cm thick. Cut the potatoes into small wedges or small cubes. Cut the seitan into medium cubes.
2. Make the oilFinely chop the garlic and oregano. Zest the lemon. In a bowl, mix 1/3 2P | 1/2 3P cup of oil with the oregano, garlic, the zest, a dash of lemon juice, salt and pepper.
3. Bake in the ovenPlace the potatoes, zucchini, tomatoes and seitan cubes on a baking sheet lined with baking paper. Add 3/4 of the oil to the vegetables and the seitan and mix well. Add salt and pepper to taste. Bake in the oven for 24-27 minutes until the potatoes are tender.
4. Plate your dishOnce out of the oven, garnish the baking sheet with the crumbled feta, the remaining oil and lemon juice to taste. You can also let the children help themselves to their fill to develop their autonomy. Bon appétit!
