Lemon and Garlic Chicken Thighs

with sautéed vegetables and hummus

1. Marinate the chicken Pat the chicken dry and put it in a bowl. Zest the lemon, grate the garlic and add to the bowl with the juice of half a lemon, a drizzle of oil, salt and pepper. Mix and let marinate.
2. Setup Cut the zucchini into half rounds. Cut the bell pepper into medium sized pieces. Thinly slice the onion.
3. Cook the chicken Warm up a drizzle of oil in a pan over medium-high heat. Cook the chicken 4-5 minutes on one side. Flip, cover and cook for 7-9 minutes over low heat until the chicken is cooked. For the BBQ: Preheat the barbecue on high heat. Oil the grill. Season the meat with salt and pepper. Reduce the barbecue to medium heat. Grill the chicken for about 4-6 minutes on each side.
4. Cook the vegetables Warm up a drizzle of oil in another pan over medium-high heat. Cook the vegetables for 6-8 minutes or until browned. Add salt and pepper.
5. Plate your dish Serve the chicken with the vegetables over the hummus. Garnish with the basil, a drizzle of oil and lemon juice, to taste. You can also let the children help themselves to their fill to develop their autonomy. Bon appétit!
