Lemon and Garlic Chicken Thighs

with sautéed vegetables and hummus

1. Marinate the chicken Pat the chicken dry and put it in a bowl. Zest the lemon, grate the garlic and add to the chicken bowl with the juice of half a lemon, a drizzle of oil, salt and pepper. Mix and let marinate.
2. Setup Cut the zucchini into half rounds. Cut the bell pepper into medium sized pieces. Thinly slice the onion.
3. Cook the chicken Warm up a drizzle of oil in a pan over medium-high heat. Cook the chicken 4-5 minutes on one side. Flip, cover and cook for 7-9 minutes over low heat until the chicken is cooked through.
4. Cook the vegetables Meanwhile, heat a drizzle of oil in another pan over medium-high heat. Cook the vegetables and spices to taste for 6-8 minutes or until browned. Add salt and pepper.
5. Plate your dish Serve the chicken with the vegetables over the hummus. Garnish with a drizzle of oil and lemon juice, to taste. Bon appétit!
