Lemon and Poppy Seeds Pancakes

2. Setup Zest the lemon and cut it in half. Chop the white chocolate. In a bowl, combine the white chocolate with 1 2P | 2 3P tbsp of cream. Microwave in 15 second intervals until chocolate is melted. Let the white chocolate ganache cool.
3. Make the pancake mixture In a bowl, combine the yogurt, 100 2P | 150 3P ml of milk, the eggs, the sugar, the poppy seeds, the lemon zest and the juice of half a lemon. Gradually add the flour, the baking soda and a pinch of salt.
4. Cook the pancakes In a skillet over medium heat, add 1 tbsp of butter. Pour a small ladle of the pancake mixture and cook 2-3 minutes on each side. Repeat with all the batter.
5. Make the whipped cream In a bowl, whip the cream until stiff peaks form. Add the white chocolate ganache and mix well.
6. Plate your dish Serve the pancakes with the blueberries and the white chocolate whipped cream. Bon appetit!
