Loaded Beef Nachos

with cheddar-jalapeño sauce and tomato salsa

1. Setup Caution hot pepper! In case of sensitive skin, use gloves to handle the ingredient. Remove the seeds for a milder taste. Preheat the oven to 425°F. Cut the tortillas into pieces. Cut the tomato into cubes. Chop the onion, the green onions the cilantro and the jalapeño. Cut the lime in half.
2. Cook the tortillas Spread the tortillas on a baking sheet. Drizzle with olive oil. Cook in the oven for 6-8 minutes. Season with salt.
3. Cook the beef In a pan over medium-high heat, add a drizzle of olive oil. Add half of the yellow onions and cook for 1-2 minutes. Add the beef, break it up and cook for 4-5 minutes. Add the spices, to taste (caution! spicy), salt and pepper. Cook another 1-2 minutes or until the beef is fully cooked.
4. Make the cheese sauce In a pot over medium heat, melt 1 2P | 2 3P tbsp. of butter. Add the flour and cook for 1 minute. Add the milk. Bring to a boil. Lower the heat and stir well. Cook for 1-2 minutes over low heat until the sauce has thickened. Add the cheese and half of the jalapeños. Season with salt and pepper.
5. Make the salsa In a bowl, combine the rest of onions, tomatoes, cilantro, juice of half a lime and the rest of the jalapeños, to taste (caution! spicy). Add salt, pepper and mix well.
6. Plate your dish Top the tortillas with the cheese sauce, the ground beef, the green onions and the salsa. Bon appétit!
