Maple, Orange and Chipotle Pork Tacos
with cabbage, carrot, apple and corn topped with sour cream

1. Setup
Finely grate the cabbage and the carrot. Drain and rinse the corn. Cut the apple into small cubes. Thinly slice the green onion. Squeeze the juice from the orange.
2. Cook the pork
Warm up a drizzle of oil in a pan over medium-high heat. Cook the pork for 4-5 minutes with the orange juice, half of the maple syrup and the chipotle spices (to taste). Salt and pepper.
3. Make the salad
Mix the cabbage with the carrot, the corn, half of the green onion, the apple, the rest of the maple syrup, a drizzle of oil, 1-2 tbsp. of cider or wine vinegar, some salt and pepper.
4. Plate your dish
Warm up the tortillas to taste. Garnish with the pork, the coleslaw, the sour cream and the remaining green onion. Add salt and pepper to taste. Bon appétit!
