Mediterranean Sweet Potato Plate

with spiced chickpeas, hummus and cilantro sauce, couscous and tomato

1. Cook the sweet potatoes Preheat the oven to 425°F. Cut the sweet potatoes into quarters. Mix with a drizzle of oil, salt and pepper. Place on a baking sheet lined with baking paper. Bake in the oven for 26-30 minutes.
2. Setup Zest the lemon. Chop the garlic and cilantro. Cut the tomato into cubes. Drain and rinse the chickpeas.
3. Make the sauce Mix the hummus with the tahini, cilantro, garlic, lemon zest, juice of half a lemon and 3-4 tbsp of water.
4. Cook the couscous Bring a saucepan with 1 2P | 1.5 3P cup of water to a boil. Pour in the couscous, cover and remove the pan from the heat. Let the couscous absorb the water for 5 minutes.
5. Cook the chickpeas Heat a drizzle of oil in a pan over medium-high heat. Cook the chickpeas with the spices for 5-6 minutes. Add salt and pepper.
6. Plate your dish Serve the couscous and garnish with the sweet potatoes, chickpeas, tomato, sauce and lemon juice to taste. Otherwise, leave all the items in the center of the table and let everyone help themselves. Bon appétit!
