Roasted Vegetable Mediterranean Sandwich

with portobello mushrooms, tomato, oregano and sweet potato fries

1. Cook the fries Preheat the oven to 425°F. Cut the sweet potatoes into fries. Place on a baking sheet lined with baking paper. Add a drizzle of oil, salt and pepper. Bake in the oven for 26-30 minutes until tender and browned.
2. Setup Cut the peppers into medium-sized pieces. Cut the stem of the mushrooms if necessary. Thinly slice the tomato and onion. Chop the oregano. Zest the lemon** then cut it into quarters.
3. Cook the vegetables Heat a skillet or grill over medium-high heat. In a bowl, mix the mushrooms, pepper and half of the oregano with a drizzle of oil, salt and pepper. If you don't like the taste of raw onion, add it to the bowl. Otherwise, keep it raw for the final step. Cook the vegetables in the pan or on the grill 5-6 minutes on each side until browned and tender.
4. Season the mayonnaise In another bowl, mix the mayonnaise with the remaining oregano, lemon zest and a dash of lemon juice to taste. Add salt and pepper.
5. Plate your dish Slice the bread open and heat in the oven for 1-2 minutes. Garnish with the mayonnaise, mushroom cut in half, pepper, tomato, onion and arugula. Serve with fries. Bon appétit!
