with Tex Mex spiced fries, tomatoes, sour cream and guacamole

1. Cook the fries Preheat the oven to 425°F. Cut the potatoes into fries. Mix in a large bowl with a drizzle of oil, the spices (spicy, to taste), salt and pepper. Place on a baking sheet lined with baking paper. Bake in the oven for 22-25 minutes.
2. Setup Dice the tomato. Chop the cilantro.
3. Make the sauce Put the demi-glace in a saucepan with 1 2P | 1.5 3P cups of water. Bring to a boil. Reduce the heat to low and simmer for 4-5 minutes until it thickens a bit. Add pepper to taste.
4. Plate your dish Top the fries with the cheese, tomato, sauce, sour cream, guacamole and cilantro. Add salt and pepper to taste. ## Otherwise, serve all the items in the middle of the table and let everyone make their own poutine.## Bon appétit!"
