Mini Beef Kofta Bowl

1. Make the rice Preheat the oven to 425°F. Rinse the rice. In a pot, add 1.5 2P | 2 3P cups of water and the bouillon cube and bring to a boil. Pour in the rice, cover and cook over low heat for 10-12 minutes.
2. Setup Chop the garlic, the cilantro and the mint. Cut the cherry tomatoes and the lemon in half. Slice the cucumbers. Cut the lettuce into pieces.
3. Make the koftas In a bowl, combine the ground beef with the spices. Form 5-6 small meatballs per person and spread them on a baking sheet. It's possible to make smaller meatballs for kids. Cook in the oven 12-15 minutes.
4. Make the sauce In a bowl, combine the yogurt, the garlic, half of the mint, the cilantro and the juice of half a lemon.
5. Make the salad In a bowl, combine the lettuce, the cucumbers, the tomatoes, the rest of the mint, the juice of half a lemon and a drizzle of olive oil. Mix well and season with salt and pepper.
6. Plate your dish Serve the koftas with the salad, the rice, the sauce and the crumbled feta. Bon appétit!
