Mushroom and Swiss Cheese Flatbread

with zucchini, garlic and a cucumber salad

1. Setup Preheat the oven to 350°F. Thinly slice the mushrooms and zucchini. Chop the onion and the garlic.
2. Cook the mushrooms Heat a drizzle of oil in a large pan on medium-high. Cook the onion and mushrooms for 3-4 minutes. Add salt and pepper.
3. Add the zucchini Add the zucchini and mix well. Cover and cook for 5-7 minutes over medium-low heat to soften the zucchini. Mix a few times. Add the garlic and cook for 1 minute. Adjust seasoning to taste.
4. Garnish the bread Place the flatbread on a baking sheet lined with baking paper. Garnish with the mushroom and zucchini mixture. Add the Swiss cheese on top. Bake in the oven for 10-12 minutes until the cheese is melted.
5. Plate your dish Meanwhile, cut the cucumber into cubes. Toss the spinach with the cucumber, sunflower seeds, a drizzle of oil, salt and pepper. Add some vinegar to taste. Serve the flatbread with the salad. You can also let the children help themselves to their fill to develop their autonomy. Bon appétit!
