Orange and Ginger Ribs

with coleslaw and fries

1. Setup Preheat the oven to 400°F. Zest the orange and squeeze to get the juice. Chop the garlic and the ginger. Cut the potatoes into sticks. Grate the cabbage.
2. Cook the fries Spread the potatoes on a baking sheet. Brush with olive oil. Add salt and pepper and bake in the oven for 28-34 minutes. Halfway through the cooking, flip the fries.
3. Make the sauce In a bowl, combine the hoisin sauce, the orange zest, the garlic, the ginger, the brown sugar and the juice of half an orange. Children can participate in this step, seeing the ingredients that make up the sauce, they'll want to taste it.
4. Cook the ribs When there is approximately 18-22 minutes left for the fries, remove the pan from the oven. Add the ribs. Brush both sides with the sauce. Return the baking sheet to the oven.
5. Make the coleslaw In a bowl, mix the cabbage with the mayonnaise and 1 2P | 2 3P tbsp. of rice or cider vinegar. Season with salt and pepper. Add a pinch of sugar if desired.
6. Plate your dish Serve the ribs with the fries and the coleslaw. Bon appétit.
