Oven baked Chicken Caprese

with spinach salad and herbed potatoes

1. Setup Preheat oven to 400°F. Cut the potatoes into cubes. Start the cooking process at step 2 and come back to this step afterwards. Cut the tomatoes into cubes. Thinly slice the basil.
2. Cook the chicken Put the potatoes and chicken on a sheet pan covered with baking paper. Add the spices, a drizzle of oil, salt and pepper. Mix. Cook in the oven for 15 minutes.
3. Make the salad Meanwhile, cut the cucumbers into rounds and mix with the spinach and the mayonnaise. It is possible to leave a few slices of cucumber to serve as crudités. Add salt and pepper.
4. Add the cheese Remove the sheet pan from the oven. Add the cheese to the chicken and the tomatoes to the pan. Add salt and pepper. Cook in the oven for 10-12 minutes.
5. Plate your dish Serve the chicken with the potatoes, tomatoes and the salad. Garnish with the basil. Or simply place everything in the centre of the table and let everyone serve themselves. Bon appétit!
