Piri Piri Pork Enchiladas

with corn, tomato and cheddar cheese

1. Setup Preheat oven to 425°F. Cut the tomatoes into small cubes. Thinly slice the onion and the cilantro. Drain the corn.
2. Cook the pork Heat a drizzle of oil in a pan over medium-high heat. Cook the pork 4-5 minutes. Add salt and pepper.
3. Add the vegetables Add the tomatoes, onion and 1 tbsp of the Piri Piri sauce. Cook 3 minutes. Add salt and pepper to taste. Add the corn and mix.
4. Garnish the tortillas Fill the tortillas with the pork mixture. Close and roll the tortillas like burritos and put in a baking dish. Top everything with the Piri Piri sauce (spicy, adjust for kids) and the cheddar. Bake in the oven for 6-8 minutes.
5. Plate your dish Serve and garnish with the sour cream and the cilantro. Bon appétit!
