with Fries, Lemon Mayo & Green Salad

1. Cook Potatoes Turn oven on to 425°F. Line baking sheet with foil. Cut potatoes into 1/4 inch thick fries. In a large bowl, toss with 1 tbsp. oil, three-quarters of the oregano, salt and pepper to taste. Place on baking sheet and bake in the oven for 25–28 minutes, until golden.
2. Cook Ribs Line a second baking sheet with foil. Place the ribs on a baking sheet. Add half of the Piri Piri sauce on ribs. Bake in oven or on a grill for 16–20 minutes.
3. Prepare Ingredients Slice tomatoes into half moons. Remove lettuce leaves from stem and slice into 1/4 inch strips . Cut lemon into wedges.
4. Prepare Salad In a second large bowl, combine 1 tbsp. oil, lettuce, tomatoes, remaining oregano, and the following to taste: onion, half of the lemon juice, salt and pepper.
5. Prepare Lemon Mayo In a small bowl, combine mayonnaise with remaining lemon juice to taste.
6. Serve Serve ribs with remaining Piri Piri sauce, fries, lemon mayo and salad. Enjoy!
