with oregano fries, lemon mayo and green salad

1. Cook the potatoes Preaheat the oven to 425°F. Cut the potatoes into fries. Toss in a bowl with a light drizzle of oil, 3/4 of the oregano, salt and pepper. Place on a baking sheet lined with baking paper. Bake in the oven for 25-28 minutes until browned.
2. Cook the ribs Place the ribs on a baking sheet lined with baking paper. Add half the Piri Piri sauce on the meat. Bake in the oven or on a grill for 16-20 minutes.
3. Setup Cut the tomatoes into half slices. Thinly slice the onion. Slice the lettuce. Cut the lemon into wedges.
4. Make the salad In a bowl, combine the lettuce with the tomatoes, the onion to taste, the remaining oregano, a drizzle of oil, lemon juice to taste, salt and pepper. Add a dash of red wine vinegar if desired.
5. Mix the mayonnaise Mix the mayonnaise with some lemon juice to taste.
6. Plate your dish Serve the ribs with the remaining Piri Piri sauce, fries, mayonnaise and salad. Bon appétit!
