Polenta pancake

with fruits, pecans and maple syrup

1. Setup Cut the plums and the apple into wedges. Peel and slice the orange.
2. Make the pancake batter In a bowl, whisk the polenta and flour mixture with the baking powder, the brown sugar, milk, egg and a pinch of salt.
3. Cook the pancakes Heat a drizzle of oil in a pan over medium-high heat. Make small pancakes and cook them about 2 minutes on each side. Add oil to the pan if needed in between batches.
4. Plate your dish Serve the pancakes, fruits and pecans in a bowl. Top with the maple syrup and sprinkle the icing sugar over everything. It's possible to slice the pancakes and make it a finger food. Bon appétit!
