Pork Linguine Alfredo

with mushrooms, zucchini, garlic and Grana Padano

1. Setup Bring a pot of salted water to a boil. Chop the parsley, garlic and onion. Thinly slice the mushrooms. Cut the zucchini into small cubes. Cut the pork into small cubes or thin strips. It's possible to adjut the cube sizes for the children.
2. Cook the pasta Cook the pasta in the boiling water 10-12 minutes until tender. Keep 1/2 2P | 3/4 3P cup of water and drain.
3. Cook the pork Heat a drizzle of oil in a big pan over high heat. Cook the pork 1-2 minutes. Add salt and pepper. Remove from the pan. Reduce the heat to medium high.
4. Cook the vegetables Add 1 tbs of butter to the pan. Add the onion, mushrooms and zucchini and cook 4-5 minutes. Add the garlic and cook 1-2 minutes.
5. Add the pasta Add the cream, pasta cooking water and grana padano. Mix. Add the pasta and pork. Mix 1-2 minutes. Adjust seasoning to taste.
6. Plate your dish Serve the pasta and garnish with parsley. Bon appétit!
