Potato and Seitan Fricassee

with sunny-side up egg, tomato, parsley and sour cream

1. Cook the potatoes Cut the potatoes into small to medium sized cubes. Put the potatoes in a pot with enough water to cover. Add salt. Bring to a boil and cook 6-8 minutes until tender. Drain.
2. Setup Chop the garlic, onion and the parsley. Cut the tomato and seitan into small cubes.
3. Cook the seitan Heat a drizzle of oil in a large pan on medium-high. Cook the onion, tomato and seitan for 4-6 minutes. Add salt and pepper. Add the garlic and cook for 1-2 minutes.
4. Add the potatoes Add the potatoes and spices and cook for 4-6 minutes until the potatoes are colored.
5. Cook the eggs Meanwhile, heat a drizzle of oil in another pan over medium heat. Crack the eggs and cook sunny side up for 3-4 minutes or until desired doneness. Season with salt and pepper.
6. Plate your dish Serve the potatoes and seitan and garnish with the egg, parsley and sour cream to taste. Bon appétit!
