Caramelized Onions Vegetarian Burger

with red kidney bean patty and potato wedges

1. Cook the potatoes Preheat the oven to 450°F. Cut the potatoes into wedges. Put on a tray lined with baking paper. Mix with a drizzle of oil, salt and pepper. Cook in the oven for 22-28 minutes until colored.
2. Caramelize the onions Thinly slice the onion. Heat a drizzle of vegetable oil in a pan over medium heat. Add the onion and the brown sugar, and cook for 6-8 minutes. Deglaze with 1 tbsp of cider or red wine vinegar and cook for 2-3 more minutes. Add salt and pepper. Set aside.
3. Setup Thinly slice the tomato(es). Seperate the leaves of the lettuce. Drain and rinse the beans. Mix the mayonnaise with the chipotle spices to taste (spicy). Split the mayo into two portions before adding the spices so that you can adjust the spices in the kids portion.
4. Make the patties Put the beans in a bowl and mash with a potato masher. Add the egg, the panko, salt and pepper and make the patties. Cook them for 3 -4 minutes on each side.
5. Plate your dish Toast the bread to taste. Assemble the burger with the patties, the chipotle mayo, the caramelized onion, the tomato(es) and the lettuce. Serve with the roasted potatoes. Serve each part of the meal family-style and let your children make their own burger. Bon appétit!
