1. SetupPreheat the oven to 425°F. Cut the carrots into thin sticks or rounds, as desired. Cut the cauliflower into pieces. Thinly slice the shallot. Drain and rinse the chickpeas. Remove the leaves from the oregano stems.
2. Roast the vegetablesPut the vegetables, shallot and chickpeas on a sheet pan lined with parchment paper. Coat with a drizzle of oil, the spices to taste, salt and pepper. Bake in the oven for 18-20 minutes.
3. Plate your dishPut the hummus in a bowl and garnish with the vegetables, lemon juice, oregano and a drizzle of oil. Adjust seasoning to taste. Serve with the pita bread. Place everything in the centre of the table and let everyone serve themselves. Bon appétit!
