Sausages and Spanakopita potatoes

with feta cheese, oregano and roasted cherry tomatoes

1. Adjust the steps of the recipe for your children To help your children discover and develop their taste buds, try mixing only a small portion of the potatoes with the spinach. Place everything in the centre of the table and let everyone serve themselves.
2. Setup Preheat the oven to 425°F. Cut the potatoes into small cubes. Roughly chop the spinach. Chop the onion, garlic and oregano.
3. Cook the potatoes Place the potatoes, sausages and cherry tomatoes on a pan lined with parchment paper. Drizzle with some oil. Season with salt and pepper. Bake in the oven for 20-22 minutes.
4. Make the spinach mix Heat a drizzle of oil in a pan over medium-high heat. Cook the onion and garlic for 3-4 minutes. Add the spinach and the cream and cook 2 minutes. Season with salt and pepper. Remove from heat.
5. Mix the potatoes When the potatoes are cooked, add them to the spinach mixture. Adjust seasoning to taste.
6. Plate your dish Serve the sausages with the tomatoes and potatoes. Garnish with the crumbled feta cheese and oregano. Bon appétit!
