Soba Noodle Salad and Peanut Dressing

with red pepper and edamames

1. Cook the noodles Bring a pot of salted water to a boil. Cook the noodles and the edamames, 4-5 minutes, until tender. Drain.
2. Setup Chop the garlic, the peanuts and the cabbage. Cut the carrot and the peppers into sticks. Cut the lime in half. Separate the cilantro leaves from the stems.
3. Make the sauce In a mixer, or using an arm blender, make a smooth sauce with the peanut butter, the garlic, the maple syrup, the nutritional yeast, the lime juice and 2 2P | 3 3P tbsp of water.
4. Assemble In a bowl, combine the noodles, the edamame, the peppers, the carrots, the cabbage, the cilantro leaves and the sauce. Mix well.
5. Plate your dish Serve the soba noodle salad. Garnish with the chopped peanuts. Bon appétit!
