1. Setup
Peel and cut the sweet potato into cubes. Chop the onion and the garlic. Cut the pepper into pieces. Separate the cilantro leaves from the stems.
2. Cook the beef
In a pan over medium-high heat, add a drizzle of olive oil. Add the beef, the garlic and the onions and cook for 3-4 minutes. Add half of the spices, season with salt and pepper and cook another 1-2 minutes. Remove and reserve.
3. Cook the vegetables
In the same pan, add the sweet potatoes and the peppers. Cook 2-3 minutes. Add the can of tomatoes and the rest of the spices. Mix well. Cover and cook for 15-20 minutes.
4. Make the sauce
In a bowl mix the guacamole with half of the sour cream and the juice of half a lime.
5. Assemble
Put the beef back into the pan with the vegetables. Add the cheddar, lower the heat and cover. Cook for 4-5 minutes or until cheese has melted.
6. Plate your dish
Serve the southwest beef casserole. Garnish with the guacamole sauce, the rest of the sour cream and the cilantro leaves. Bon appétit!
