Souvlaki Spiced Tofu Pita

with tzatziki and fresh oregano

1. Setup Mince the onion. Cut the pepper(s), the zucchini and the tofu into sticks. Zest the lemon. Cut the tomato(es) into cubes. Remove the leaves from the oregano.
2. Cook the vegetables Heat a drizzle of oil in a pan over medium-high heat. Cook the onion, the zucchini and the pepper(s) with half of the spices for 4-5 minutes. Season with salt and pepper. Add the tomato(es) and cook for 2-3 minutes. Remove from the pan. To respect the food preferences of our children, separate the vegetables into different bowls and let your children decide how much of each they'll put on their plate upon serving. If desired, leave the tomato raw.
3. Cook the tofu Add the tofu, a drizzle of oil and the rest of the spices. Cook for 3-4 minutes until brown. Add some lime zest. Remove from the pan. Warm the pita bread in the pan for 30 seconds.
4. Plate your dish Garnish the pitas with the tzatziki, the vegetables, the tofu and the oregano. Add lemon juice to taste. Roll and enjoy. Serve each part of the meal family-style and let your children make their own pita. Bon appétit!
