with rice noodles and peanut sauce

1. Setup Preheat the oven to 400 ° F. Slice the cucumbers. Chop the cilantro, the garlic, the ginger, the chili peppers and the peanuts. Slice half of the shallot and chop the rest.
2. Cook the meatballs In a bowl, combine the ground beef, half of the cilantro, the garlic, the ginger and the chili peppers (to taste, spicy!). Season with salt and pepper and mix well. On a baking sheet, add a drizzle of olive oil and form 5-6 meatballs per person and place them on the baking sheet. Bake for 12-15 minutes.
3. Make the peanut sauce Bring a pot of water to a boil. In another pot over medium-high heat, combine 160 2P | 250 3P ml of the coconut milk and the peanut butter. Add 1 tbsp of rice vinegar. Mix well. bring to a boil and lower the heat. Cook 2-3 minutes or until the sauce has slightly thickened.
4. Cook the rice noodles Bring a pot of water to a boil. Cook the rice noodles 3-4 minutes. Drain and reserve.
5. Plate your dish Serve the beef meatballs on a bed of rice noodles. Serve with the peanut sauce, the shallots, the cucumbers and the chopped peanuts. Garnish with the rest of the chopped cilantro. Otherwise, serve each part of the meal family-style and let your children make their own plate! Bon appetit!
