Thyme Grilled Chicken Breast

with sour cream mashed potatoes

1. Cook the potatoes Cut the potatoes into cubes. Put in salted water and bring to a boil. Cook for 10-12 minutes until tender. Drain and mash with the sour cream, a bit of milk to taste, salt and pepper. Keep warm.
2. Setup Chop the parsley and the garlic. Cut off both ends from the green beans.
3. Cook the chicken Cover the chicken with the spices. Add salt and pepper. Heat a drizzle of oil in a pan over medium heat. Cook the chicken for 5-6 minutes. Flip the chicken, cover and cook over low heat for 8-10 minutes or until cooked through. Remove from the pan and keep warm.
4. Cook the beans Deglaze the pan with 1/4 |1/3 cup of water. Add the green beans and cook for 2-3 minutes. There should be enough water left in the pan to create a steaming effect. Add salt and pepper. Remove from the pan.
5. Make the sauce Add 2 tbs of butter and the garlic to the pan. Cook for 2-3 minutes. The sauce should thicken.
6. Plate your dish Serve the chicken with the green beans and the potatoes. Garnish with the sauce and the parsley. Serve each part of the meal family-style and let your children make their own plate. Bon appétit!
