1. SetupPreheat the oven to 425°F. Thinly slice the onion, bell pepper and radish. Cut the tomato into cubes. Tear the tofu into medium sized pieces. Separate the cilantro leaves from the branches. Cut the lime into wedges.
2. Cook the vegetablesIn a large bowl, mix the tofu with the bell pepper, onion, spices to taste, a drizzle of oil, salt and pepper. Spread on a baking sheet lined with baking paper. Bake in the oven for 16-18 minutes.
3. Pickle the radishPlace the radish in a bowl. Add 1/4 cup of water, 2-3 tbsp. of vinegar, a pinch of salt and 1 tbsp. of sugar in a small saucepan. Bring to a boil. Pour over the radish and let marinate.
4. Plate your dishAdd the tortillas to the oven 1-2 minutes. Garnish with the tofu, vegetables, sauce, pickled radishes, tomato and cilantro. Add lime juice to taste. Bon appétit!
