1. Adjust the step of the recipe for your children To respect the food preferences of our children, it's possible to adjust the recipe for them. You can make tacos rather than nachos, they would be able to assemble their own tacos with their ingredients of choice.
2. Setup Preheat the oven to 375°F. Drain the sweet corn and the black beans. Chop the tomatoes, red onion and green pepper into small cubes. Cut the tortillas into triangles.
3. Cook the tortillas Put the tortillas on a tray with baking paper. Brush with some oil. Bake in the oven for 8-12 minutes until golden and crispy.
4. Cook the vegetables Heat a drizzle of oil in a pan over medium high heat and cook the black beans, onion, tomatoes, bell pepper and corn for about 4-5 minutes. Season with salt and pepper.
5. Make the nachos On a baking sheet or an oven-safe dish, put alternating layers of tortillas, vegetables and cheese. Cook in the oven for around 5-7 minutes, until the cheese melts. Meanwhile, mix the chipotle powder to taste (Spicy!) with the sour cream.
6. Plate the dish Serve the nachos with the sour cream, guacamole and cilantro leaves. Bon appétit!
