Vegetarian Dumplings in a Hoisin Broth

with mushrooms, cabbage, carrot, ginger and cilantro

1. Setup Very finely chop the mushrooms, cabbage, ginger and cilantro. Grate the carrot. Thinly slice the green onion. If desired, use a food processor to finely chop the mushrooms, cabbage and carrot more quickly.
2. Make the stuffing Heat a drizzle of oil in a skillet over medium-high heat. Cook the mushrooms, cabbage, carrot and half of the soy sauce for 4-6 minutes. Add salt and pepper to taste. Remove the pan from the heat and add in the sesame seeds and half of the cilantro.
3. Prepare the broth Heat a drizzle of oil in a pot over medium heat. Cook the green onion with the ginger and spices 2 minutes. Add the Hoisin sauce, remaining soy sauce, broth cube and 3 2P | 4.5 3P cups of water. Bring to a boil. Cover and let simmer over low heat. Adjust the seasoning to taste before serving.
4. Make the wontons Prepare a small bowl of water. Put about 1 tsp. of vegetable mixture in the middle of the wonton wrappers. Brush half of the edge of the wrapper with water. Close the wrapper to make a triangle. Bring the corners together and stick them together with a bit of water. Make sure you press down on the dough to seal the dumplings.
5. Cook the wonton In a skillet over medium-high heat, add a light drizzle of oil. Add the dumplings and cook for 1-2 minutes until the bottom is golden brown. Add 1/3 cup of water, lower the heat to medium-low, cover and cook for 4 minutes.
6. Plate your dish Serve the broth in a bowl and add the dumplings and remaining cilantro. Bon appétit!
