Lemony zucchini and Goat Cheese Pizza

with pine nuts and basil

1. Setup Preheat oven to 425°F. Slice the zucchini and the onions. Zest the lemon and cut it in half. Separate the basil leaves from their stems.
2. Cook the vegetables Spread the zucchini and the onions on a baking sheet. Drizzle with olive oil, season with salt and pepper. Cook in the oven for 15-18 minutes.
3. Roll ou the dough On a floured work surface, roll out the pizza dough to make a large pizza or smaller individual pizzas.
4. Assemble and cook in the oven In a bowl, combine the goat cheese, the grana padano, the lemon zest, the juice of half a lemon and a drizzle of olive oil. Spread it on the pizza dough. Add the zucchini and the onions on the pizza. It is possible to let the children garnish their own pizzas. Cook in the oven for 12-15 minutes.
5. Toast the nuts In a pan over medium heat, add the pine nuts. Toast for 3-4 minutes until colored. Remove from the pan.
6. Plate your dish Garnish the pizza with the basil leaves and the pine nuts. Bon appétit!
